Instant Rest

You know what gets a bad wrap around here? Instant mashed potatoes.


And I used to be one of those judgy people who looked down on them. RUDE!


Ok, so I didn't really look down on them but my dad's side of the family is from South Carolina and they can cook some down right awesome southern cookin'! I mean delicious made from scratch good home cookin'.


Anyways, every time I was with my grandma I was learning how to cook and made from scratch potatoes was a staple. Pretty sure every meal had them. Along with every other starch known to man. Thank you generational obesity (but that's for another post, ha!)


These are not quick potatoes to make, am I right?! You pick the best ones, you peel them. There are a few of us doing this of course. Huge meal for a huge family! And if you are lucky you get one of the actual peelers but if you are too slow you get a knife. I was a child and terrified to peel with a knife, but hey those were different times LOL and I survived! After a few years, I actually preferred the knife and even had a favorite! You peel, you chop, you boil, you mash and then begins the best part. The perfect ratio of salt, pepper, milk and butter. Every family does it different but this was how I was taught. You beat and season, taste, beat and season, taste until they are clouds of perfection.


This is a LONG process!


Oh, believe me, I know there are shortcuts and "other" ways to do it. But this was Mamateens way and her way was the right way and so we obeyed! Even after she went on to heaven and left us here to miss her I still did it her way. And they really are the best potatoes!


I never get any complaints when I make them. People always want the recipe which I have no clue because I was not taught to measure, sorry not sorry! And I have our regular guests requesting them at holidays. Another thing is, I usually don't make gravy. Mamateen said mashed potatoes should be good enough that you don't need it and we said "yes ma'am!" Ha! I miss her so much!


How can an entire blog post be about mashed potatoes 😆 I do not know!


But guess what I made as a side dish tonight with our dinner? You guessed it!


Instant Mashed Potatoes!


Instant mashed potatoes helped me be more present tonight and in this season of rest with my family I said no to the homemade potatoes and made instant ones. And low and behold, no one complained, and I was grateful for the time it saved! Of course I will make the amazing Mamateen Potatoes again....many times!


But for tonight instant mashed potatoes brought me rest! That is all. 😜
